Carrot Cake Recipe: Very Tasty!
Carrot Cake is one of my favorite deserts, it’s really delicious, here’s my twist on it!
½ cup unsalted butter
1 cup sugar
1 teaspoon vanilla extract
2 cups all-purpose flour
¼ cup evaporated milk
2 teaspoons baking powder
1 teaspoon ground cinnamon
2 cups grated carrots
¾ cup coconut
1/3 cup raisins
Ingredients On Counter
Preheat oven to 350 degrees F. Grease a 9×13 inch pan. Gather a large bowl.
In the large bowl, beat together eggs, butter, sugar and vanilla extract.
Then mix in flour, milk, baking powder and cinnamon into mixture.
Stir in carrots to the mixture.
Fold in coconut and raisins. Leave a few raisins back for topping.
Pour mixture into prepared pan and then top mixture with the remainder raisins.
Bake in the preheated oven for 50 minutes or until a toothpick inserted into the center of the cake comes out clean.
Let cool in pan for 10 minutes, then cut into squares and garnish if desired with frosting.
Now your cake is ready to be served!

Take a step further and add whipped cream
