1 cup butter
1 ¾ cup granulated sugar
1 ½ teaspoons vanilla extract
1 ½ cups milk
2 ½ cups of all-purpose flour
6 tablespoons unsweetened cocoa powder
1 ½ teaspoons baking powder
1 teaspoon salt
Chocolate Frosting (for the center)
½ cup butter
2/3 cup unsweetened cocoa powder
3 cups powdered sugar
1/3 cup milk
1 teaspoon vanilla extract
Coconut Frosting (for the top)
½ cup shortening
½ teaspoon salt
¾ teaspoon vanilla extract
1/8 teaspoon almond extract
2 cups confectioner sugar
½ cup unsweetened cocoa powder
Ingredients on Counter
Preheat oven to 350 degrees F.
In large bowl mix together flour, cocoa, baking powder and salt.
In another bowl cream together the butter and sugar until light and fluffy
Beat in eggs one at a time and then stir in vanilla.
Beat in flour mixture alternately with the milk, mixing just until incorporated.
Pour batter into prepared pans and bake for 40 to 45 mins or until a toothpick inserted into the center of the cake comes clean. Allow to cool.
For the chocolate frosting, melt butter and stir in cocoa, powdered sugar, vanilla and milk and beat together.
For the coconut frosting, mix shortening, water, vanilla, almond extract and powdered sugar in a mixer for 5-10 minutes. Add coconut and cocoa and mix for 2 minutes.
Place chocolate frosting in the middle of the layered cakes. Frost the top of the cake with the coconut frosting. Place in refrigerator for 5-10 minutes for the coconut frosting to harden. Then slice and serve.
